Looking for a Delicious, Easy Meal for a Dinner Party? Look no further. On today’s episode chef Christine Van Bloem breaks down a delicious meal for a dinner party that even I could cook! Beef tenderloin, mashed potatoes and green beans. Yum!

SHOW NOTES 

·      Buy Beef Tenderloin untrimmed. 

·      Trim and cut the beef into 2 pieces. 

·      Before cooking the beef let it sit and come to approximately room temperature. Only let the meat sit out for an hour. Tie it with cooking string.

·      Brown the tenderloin on the stove. 

·      Do NOT use olive oil. Use High Heat and vegetable oil. 

·      Brown 2-3 sides of the beef. 

·      After the beef is brown put it in a rub. Rub consists of: olive oil, whole grain mustard, sage, salt and thyme.

·      Put into 450 degree oven for about 25 minutes.

·      Take out of the oven and tent it with foil.

·       Mashed Potatoes: Use Russet potatoes, peel, cut in chunks, place in cold water on stove. Boil them until they're soft, you can test with a fork. 

·      Beat potatoes add in sour cream, milk, butter and salt.

·      To keep the mashed potatoes warm you can put them in a crock pot. Do NOT add water. 

·      Green Beans: You can make them the night before. Blanch the green beans (boil in salt water). When they’re done put them in a bowl of ice water. 

·      Dry the green beans with a paper towel. 

·      If cooking them the night before put them in a plastic bag in the refrigerator. 

·      While the meat is resting brown butter and toast with almonds. 

·      Make a simple salad in the morning. 

·      Homemade dressing: Dijon mustard, little honey, vinegar, salt and pepper. Add olive oil 3 parts oil to 1 part vinegar. Chris does 2 parts oil to 1 part vinegar.
